新廚以料理代筆 S Restaurant & Bar譜出歐陸菜色詩意
The Executive Chef of S Restaurant & Bar uses his dishes to write a poem of contemporary European cuisine.
Chef Constant, born in Hong Kong, had started his Fine dining career in famous Michelin-starred restaurant Joel Robuchon. Since then, he had worked in many well-known top kitchens including Amber and 8 1/2 Otto e Mezzo Bombana, etc. After understanding and mastering the most representative Fine Dinning Cuisines – French & Italian, Constant decided to continue improve himself and went to Denmark and Austria working with many famous restaurants such as Restaurant AOC, Kokkeriet in Copenhagen and Restaurant Konstantin Filippou, MARZ & SHON in Vienna. He is deeply inspired by all diverse cultures in different countries and has slowly create a unique style of fusion of his own.
Constant’s cuisine not only can taste the exquisite details but also experience the spirit behind the dishes. This romantic chef compares food to music as it can bring one to a special moment in life without any translation nor despite any different barriers. Constant called this menu for S Restaurant & Bar “A Journey of Life”, based on Contemporary European Cuisine and combined with the soul of the chef’s rich experience, integrating Oriental Poetry into Western Romance.
One of his signature dish “Stone”, a salted scallop coated with smooth surface made from seafood broth and buttermilk presented in the form of stones. The plate is lined with black pebbles, depicting the concept of Chinese landscape painting and expressing the connotation of life. Life is like a stone from upstream, rolling down gradually in years, creating a smooth appearance and different shapes.
Constant is deeply inspired and influenced by his mother who use to work in Chinese restaurant. Many dishes he creates reflected to his childhood memories. The dish “Cod Fish / Beurre blanc”, one of the western representative seafood dishes had been reinvented by adding his hometown flavors with oriental spices, ginger, onions. Constant explained “this series of dishes is about expression of enthusiasm and strength in a journey of life, and I hope that every guest who comes to S Hotel can feel the connotation through all five different senses.”
